YIELDS: 8 servings


  • 3 green onions, chopped
  • 1/3 cup cilantro
  • 1/2 bell pepper, chopped
  • 3 chicken breasts, cubed
  • 2 Tbsp. light olive oil
  • 2 tsp. Knorr chicken bouillon
  • 1 tsp. salt
  • 2 pkg. Saxon Goya
  • 2 cups barley couscous
  • 4 1/2 cups water


  1. Chop green onions, cilantro, and bell pepper in a food processor. Fry chicken with remaining spices and chopped veggies until chicken is cooked. 
  2. Add barley and water to chicken mixture. Bring all to a boil and simmer for 15 minutes or until couscous is done.
  3. Mix it all together and enjoy!
