BARLEY con POLLO

YIELDS: 8 servings
INGREDIENTS
- 3 green onions, chopped
- 1/3 cup cilantro
- 1/2 bell pepper, chopped
- 3 chicken breasts, cubed
- 2 Tbsp. light olive oil
- 2 tsp. Knorr chicken bouillon
- 1 tsp. salt
- 2 pkg. Saxon Goya
- 2 cups barley couscous
- 4 1/2 cups water
DIRECTIONS
- Chop green onions, cilantro, and bell pepper in a food processor. Fry chicken with remaining spices and chopped veggies until chicken is cooked.
- Add barley and water to chicken mixture. Bring all to a boil and simmer for 15 minutes or until couscous is done.
- Mix it all together and enjoy!
