BARLEYÂ COUSCOUS TACO MEAT
Bulk up your regular taco meat with the hardy addition of AFC barley couscous!
YIELDS: 5-6Â servings
INGREDIENTS
- 1lb. ground beef or turkey
- 1Â large onion, chopped
- 1 1/2Â packets of taco seasoning (or 5Â Tbsp)*
- 3/4 cup water (plus 1 cup for the couscous)
- 1/2 cup of AFC barley couscous
- 1 can black beans, drained and rinsed
DIRECTIONS
- In a large saucepan, cook up ground beef/turkey until browned. Drain fat.
- Throw in chopped onions and cook until translucent. Â
- Add taco seasoning and water. Cook until bubbly and thick.Â
- Enter AFC barley couscous! Add the extra water, mix it all together, and bring to a boil. Turn it down to a simmer, cover with a lid, and cook for 8-10 minutes.Â
- Fluff up, stir in black beans. Enjoy with taco shells or a taco salad!
TIPS
*This may seem like a lot of taco seasoning but remember you are seasoning the couscous too.Â
​You can totally use leftover couscous in this recipe! Just don't add the extra water.Â
