CHICKEN & ONION COUSCOUS
A simple weeknight meal you can customize to your family.
YIELDS: 4 servings
INGREDIENTS
- 1 cup AFC barley couscous
- 2 1/4 cups water
- 2 tsp bouillon
- 1 chicken breast, cubed
- 1 Tbsp olive oil
- 1/2 cup onions, chopped
- salt and pepper to taste
DIRECTIONS
- Cook couscous following directions on the package, adding 2 tsp bouillon.
- Cube chicken breast, fry in olive oil for 2 minutes.
- Add chopped onions to chicken, continue cooking till chicken is no longer pink.
- Stir continuously so onions don't burn.
- Mix into cooked couscous, salt, and pepper to taste.
- Enjoy!
