CHICKEN & ONIONĀ COUSCOUS

A simple weeknight meal you can customize to your family.Ā Ā 

YIELDS: 4Ā servings

INGREDIENTS

  • 1 cup AFC barley couscous
  • 2 Ā 1/4 cups water
  • 2 tsp bouillon
  • 1 chicken breast, cubed
  • 1 Tbsp olive oil
  • 1/2 cupĀ onions, chopped
  • salt and pepper to taste

DIRECTIONS

  1. Cook couscous following directions on the package, adding 2Ā tsp bouillon.Ā 
  2. ā€‹Cube chicken breast, fry in olive oil for 2 minutes.Ā 
  3. Add chopped onions to chicken, continue cooking till chicken is no longer pink.Ā 
  4. ā€‹Stir continuously so onions don't burn.Ā 
  5. Mix into cooked couscous, salt, and pepper to taste.Ā 
  6. Enjoy!ā€‹
