CHICKEN & ONIONĀ COUSCOUS
A simple weeknight meal you can customize to your family.Ā Ā
YIELDS: 4Ā servings
INGREDIENTS
- 1 cup AFC barley couscous
- 2 Ā 1/4 cups water
- 2 tsp bouillon
- 1 chicken breast, cubed
- 1 Tbsp olive oil
- 1/2 cupĀ onions, chopped
- salt and pepper to taste
DIRECTIONS
- Cook couscous following directions on the package, adding 2Ā tsp bouillon.Ā
- āCube chicken breast, fry in olive oil for 2 minutes.Ā
- Add chopped onions to chicken, continue cooking till chicken is no longer pink.Ā
- āStir continuously so onions don't burn.Ā
- Mix into cooked couscous, salt, and pepper to taste.Ā
- Enjoy!ā
