CORDON BLEU BARLEY SOUP
A classic dish turned into a yummy soup!
YIELDS: 8-10 servings
INGREDIENTS
- 1 cup Alaska Flour Company Barley Couscous, cooked
- 2 Tbsp butter
- 2 Tbsp olive oil
- 1 small head of cauliflower, chopped
- 1 medium onion, chopped
- 1 garlic clove, minced
- 4 Tbsp Alaska Flour Company Barley Flour
- 3 cups chicken broth
- 2 cups shredded chicken, cooked
- 3 cups half-and-half
- 1 cup ham, cooked, and finely cubed
- 2 tsp mustard
- 1 tsp salt
- 1/2 tsp pepper
- 2 cups shredded swiss cheese
DIRECTIONS
- In a large saucepan, heat butter and olive oil on low heat.
- Add cauliflower, onions, and garlic. Cook and stir for 5 minutes.
- Stir in Barley Flour until blended.
- Gradually whisk in the chicken broth. Let simmer for a few minutes till the cauliflower is tender.
- Stir in chicken, half-and-half, ham, mustard, salt, and pepper. Heat through and stir in Swiss cheese until melted.
TIP
- If the soup becomes too thick, add more half-and-half or more chicken broth till desired consistency.
