FRIED COUSCOUS
Your favorite Asian side dish with a barley twist!
YIELDS: 6-8 servings
INGREDIENTS
- 1 1/2-2 cups chopped ham
- 1 small white onion, chopped
- 1 bell pepper, chopped
- 1 Tbsp oil
- 3 eggs, lightly beaten
- 3 cups cooked barley couscous
- 1 cup pineapple tidbits
- 1 Tbsp sesame oil
- 2-3 Tbsp soy sauce
- 2 Tbsp chopped green onions for toppings
DIRECTIONS
- Preheat a large skillet or wok to medium heat. Add oil, ham, onion, and bell pepper and fry until tender.
- Move the vegetable and meat mixture to one side of the pan, and cook the eggs until scrambled.
- Mix together the eggs, vegetables, and meat.
- Add the barley couscous and pineapple to the egg, vegetable, and meat mixture.
- Pour the soy sauce and sesame oil on top.
- Fry everything together until heated through.
- Top with green onions.
